When I was growing up, my family would stay-cation at a resort on the north shore of O’ahu.  After we would settle in to our room, we’d go to the convenient store in the lobby to get some treats. I would always choose the coconut popsicles.  It was my absolute favorite… sweet, creamy, and filled with just the right amount of chewy coconut. YUM!

These coconut popsicles are a copy cat recipe of my favorite frozen treat!

How do you make Coconut Popsicles?

You will need:

This recipe makes about 8 2-ounce popsicles. The recipe amounts may have to be adjusted to fill different sized popsicle molds.

By the way, if you don’t have any popsicle molds on hand, it’s not a big deal! Here are some creative homemade molds you can try.


Method:

  1. Add all the ingredients to a bowl and gently mix until the sugar is dissolved. Avoid creating air bubbles, as it will create small air pockets in your final product. (It’s not a big deal if it happens…it will still taste great! It’s more about the presentation.)
  2. Fill the popsicle molds with the mixture. If your popsicle mold has a place to insert popsicle sticks, do so now. Coconut Popsicles
  3. Freeze for 6 hours or overnight.**If your popsicle mold does not have a place for popsicle sticks, remove the mold from the freezer after about 2 hours. Place the popsicle sticks in, and return to the freezer for at least another 4 hours.** Coconut Popsicles
  4. When you are ready to eat them, run the popsicle mold under warm water, then gently pull on the popsicle sticks to release them from the mold. Enjoy!

Are all coconut milks the same?

Aroy-D coconut milk.No, not all coconut milk is created equal! Depending on the brand, the ratio of coconut milk to water will vary, which affects the flavor, consistency and nutritional value. Some brands only contain coconut milk and water, while others have sweeteners and preservatives added. It is really disappointing to open a can (or carton) of coconut milk and have it taste watery and artificial. It can completely ruin the flavor of your dish.

I recommend using Aroy-D brand (from Thailand), which can be found at any Asian store. You can also buy it online here. It is contains 60% coconut milk and water, and that’s it. It is delicious and creamy, and tastes very natural.

How do I store the popsicles?

You can store the popsicles in an airtight container or freezer bag with parchment paper between any layers you may have.

If you don’t already have them, try these reusable freezer bags.  They’re better for the environment and better for your wallet!
