Toddler Zucchini + Carrot Fritters

Zucchini and carrots are such healthy vegetables that they should be a regular part of your child’s diet. These Toddler Zucchini + Carrot Fritters are the perfect way to incorporate them from baby to toddler years.

Ingredients

  • 1/4 cup zucchini grated
  • 1/4 cup carrots grated
  • handful fresh herbs, chopped cilantro, parsley, chives, green onions, etc.
  • 1/4 cup milk
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1 pinch salt optional (you can omit for babies under 1)

Instructions

  • Preheat the oven to 350º F.
  • Grate the zucchini and carrots.
  • In a mixing bowl, combine the egg and milk.
  • Add the zucchini, carrots and herbs and mix well.
  • Add the flour and salt (optional) and gently mixed until combined. Don’t over mix it.
  • Use a tablespoon to spoon the batter onto a sheet pan lined with parchment paper.
  • Bake for 12-15 minutes, until the edges begin to turn golden brown.

Notes

Vegan Substitutes:
  • To substitute a flax egg or chia egg for the chicken egg, simply mix together 1 tablespoon of ground flax seeds or ground chia seeds and 3 tablespoons of water. Let it sit for 5 minutes, then add it to the recipe.
  • Substitutes cow's milk with your favorite non-dairy milk.
Storing:
  • These fritters can be stored in the fridge for up to 5 days and in the freezer for up to 3 months.
