Preheat the oven to 350º F.
Grate the zucchini and carrots.
In a mixing bowl, combine the egg and milk.
Add the zucchini, carrots and herbs and mix well.
Add the flour and salt (optional) and gently mixed until combined. Don’t over mix it.
Use a tablespoon to spoon the batter onto a sheet pan lined with parchment paper.
Bake for 12-15 minutes, until the edges begin to turn golden brown.
