How do you make Toddler Zucchini + Carrot Fritters?

Toddler Zucchini + Carrot Fritters

Ingredients:

  • 1/4 cup of zucchini, grated
  • 1/4 cup of carrots, grated
  • a handful of fresh herbs, chopped (cilantro, parsley, chives, green onions, etc.)
  • 1/4 cup of milk
  • 1 egg
  • 1/2 cup of flour
  • pinch of salt (you can omit this for babies under 1)

Equipment:

Step 1: Preheat the oven to 350ยบ F.

Step 2: Grate the zucchini and carrots.

Step 3: In a mixing bowl, combine the egg and milk.

Step 4: Add the zucchini, carrots and herbs and mix well.

Step 5: Add the flour and salt (optional) and gently mixed until combined. Don’t over mix it.

    This recipe is great! Although it would be better with garlic. I made it today and added some garlic and it turned out flavorful. Also frying it would come out nicer I think, but those who are trying it out for baby led weaning this is great! Very healthy and delicious!

    When freezing, do we cook them first and then freeze or just scoop into Pattys and freeze the uncooked ones

  5. Could you use whole wheat flour? Zucchini is pretty “wet”, so maybe ti wouldn’t be as dry? (since whole wheat usually absorbs more liquid!). Has anyone tried?!

        I made them with whole wheat and the all purpose. My all purpose came out just like yours: fluffy and smooth. The whole wheat comes out a bit more rough – not as smooth, but my almost-9month old still enjoyed both! ๐Ÿ™‚ I could maybe use a tbsp or so less of the flour to see if that would make it closer in texture to the all-purpose, but regardless– they worked for my kiddo! ๐Ÿ™‚

    • I haven’t tried it, but I’m sure it would taste great! You may want to steam the broccoli, then cut it into small pieces before adding it to the batter. If you do try it, let me know how it turns out! ๐Ÿ™‚

  8. I have these in the oven now. Only I was out of flour so I used baby cereal..not sure if theyโ€™ll turn out. Has anyone tried this?

  9. I tried this recipe. But I think I made them little too liquid. Not sure how it will turn out. Just added it to the oven.

    I have these in the oven now! I used 1 Tblsp chia seeds added to 3 Tblsp water, let sit for 5 min. (to replace egg). These are for my great-grandson age 17 months. He loves zucchini so hoping heโ€™ll line these! I also make a sweet potato and broccoli tot that he loves too!
