Total Time 1 hour 40 minutes
Servings: 1 cup

Ingredients

  • 1 cup Okinawan sweet potato cooked
  • 1/2 teaspoon fresh grated or chopped ginger
  • 2 tablespoons coconut milk
  • water, breast milk or baby formula as needed

Equipment

  • blender
  • sheet pan
  • foil

Method

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the Okinawan sweet potato. Prick the skin several times with a fork to allow steam to escape, then wrap it in aluminum foil.
  3. Place the wrapped sweet potato on a baking sheet and bake for 60–90 minutes, depending on its size, until very soft and easily pierced with a fork.
  4. Allow the sweet potato to cool enough to handle, then remove the skin. Measure 1 cup of the cooked flesh and add it to a blender or food processor with the ginger and coconut milk.
  5. Blend until smooth, adding a small amount of water, prepared baby formula, or breast milk as needed to reach your desired consistency. Allow the puree to cool to a safe serving temperature before serving.

Notes

Recipe Tips:
  • Okinawan sweet potatoes have a naturally sweet flavor and beautiful purple color.
  • Choose plain, unsweetened canned coconut milk rather than a sweetened coconut milk beverage.
  • Substitute a pinch of cinnamon for the ginger to try a different flavor.
  • For a smoother puree, use a high-powered blender.
  • Introduce the ingredients individually first if they're new to your baby.
  • Refrigerate promptly in an airtight container for 1–2 days or freeze individual portions for 1–2 months.
  • Discard any leftovers from your baby's serving bowl.
Feeding Note: This recipe is intended for babies who are developmentally ready for solid foods, typically around 6 months old. Serve in an age-appropriate texture and consult your pediatrician if you have feeding or allergy concerns.
