Add all of the dry ingredients to a large bowl and mix.
Add the corn and herbs and mix until just combined.Don’t over-mix.
Heat the oil in a frying pan over medium heat. Be liberal with the oil, because this is what gives the fritters their crispy exterior. I like to use a non-stick pan because I feel like I don’t need quite as much oil.
Pour the batter into the pan, using 1/4 cup per fritter. Fry them for 3-4 minutes on each side, until they are golden brown.
Remove the fritters from the pan and place them on a plate lined with paper towel. When you’re ready to serve them, transfer them to another plate and serve with your favorite sauce or topping. Enjoy!
