Vegan Sweet Corn Fritters

These Vegan Sweet Corn Fritters are slightly sweet, crispy on the outside, and soft on the inside. Serve them with your favorite sauces or toppings and enjoy them as an appetizer or side dish.

Ingredients

  • 1 can cream style corn 14.75 ounces
  • 3/4 cup all-purpose flour
  • 1/2 cup corn meal
  • 1/2 teaspoon salt
  • handful fresh herbs cilantro, parsley, chives or green onions
  • oil for frying avocado, grapeseed or vegetable oil

Instructions

  • Add all of the dry ingredients to a large bowl and mix.
  • Add the corn and herbs and mix until just combined.Don’t over-mix.
  • Heat the oil in a frying pan over medium heat. Be liberal with the oil, because this is what gives the fritters their crispy exterior. I like to use a non-stick pan because I feel like I don’t need quite as much oil.
  • Pour the batter into the pan, using 1/4 cup per fritter. Fry them for 3-4 minutes on each side, until they are golden brown.
  • Remove the fritters from the pan and place them on a plate lined with paper towel. When you’re ready to serve them, transfer them to another plate and serve with your favorite sauce or topping. Enjoy!
