Cinnamon Apple Mochi Waffles are a delicious fall breakfast treat. These naturally gluten free waffles are crispy on the outside and chewy like mochi on the inside.

Apple Mochi Waffle

Mochi waffles are popular in Hawai’i, and rightly so, because they’re SO good! They are a cross between a Belgian waffle and mochi, a Japanese rice cake with a soft, chewy texture.

I wanted to create a fall inspired mochi waffle flavor, and since it’s apple season, I thought cinnamon apple would be perfect! And let me tell you, it’s good!

The mochi waffles are flavored with brown sugar, cinnamon, and apples, and are topped with a sweet, buttery apple syrup. It’s the perfect breakfast treat for you and your family this fall!

What is mochiko?

Mochiko is a Japanese rice flour made from mochigome rice. It is sometimes referred to as sweet, glutenous rice flour, but it’s gluten free.

Mochiko is essential to making mochi waffles, and cannot be substituted. You can buy it at most Asian stores, or your can buy it online here.

Don’t have a waffle iron?

Do you want to make mochi waffles, but don’t have a waffle iron? No problem! You can get a good quality waffle iron without spending too much money.

How do you make Cinnamon Apple Mochi Waffles with Apple Syrup?

Apple Mochi Waffle

Apple Syrup:

  • 3 cups of granny smith apples, peeled, cored and diced (about 3 small apples)
  • 1 cup of brown sugar
  • 1/4 cup of water
  • 2 tablespoons of butter
  • 1 teaspoon of cornstarch
  • 1 teaspoon of water

Cinnamon Apple Mochi Waffle:

  • 3/4 cup of milk
  • 1 egg
  • 1 1/4 cup of mochiko
  • 1/4 cup of brown sugar
  • 1 1/2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 1 teaspoon of cinnamon
  • 1/2 cup of cooked apples (from apple syrup)
  • non-stick spray
  • chopped pecans (optional)

To make the Apple Syrup:

Step 1: Add apples, brown sugar and 1/4 cup of water to a small pot over medium heat. Bring it to a soft boil, then cook it for 10 minutes, stirring occasionally.

Step 2: Remove 1/2 cup of apples and set it aside. (Don’t include the liquid.)

Step 3: Mix the 1 teaspoon of water together with the cornstarch. Add it to the pot, along with the butter, and cook for an additional 2 minutes until it thickens slightly.

To make the Cinnamon Apple Mochi Waffles:

Step 1: Preheat your waffle iron.

Step 2: In a small bowl, combine the mochiko, baking powder, salt and cinnamon. Set it aside.

Combine dry ingredients.

Step 3: Whisk the milk, egg and brown sugar together in a large bowl.

Whisk wet ingredients together.

Step 4: Add the dry ingredients to the wet ingredients and mix until almost combined. Then, add the 1/2 cup of apples and mix until everything is incorporated.

Step 5: Grease your waffle iron with non-stick spray. Then add 1/2 cup of batter and cook for 3-5 minutes until golden brown.

Step 6: Top with apple syrup and chopped pecans and dig in! Enjoy!
