Earth Day is right around the corner, and what better way to celebrate it than with Earth cookies?! Your kids will have a blast making them…and an even better time eating them!
I’ve included a delicious, no chill sugar cookie recipe, but if you’re short on time you can always use your favorite store-bought cookie dough to make these.

Earth Day is celebrated every year on April 22nd. It’s a day to celebrate our beautiful planet and to bring attention to environmental issues that affect it.

How do you make Earth cookies?
Ingredients:
- 1 cup of unsalted butter, room temperature
- 1 cup of sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
- 3 cups of all purpose flour
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- blue food coloring
- green food coloring
Step 1: Preheat the oven to 350º F. Add the butter and sugar to a stand mixer and beat for 3 minutes, or until it becomes light and fluffy.
Step 2: Scrape down the sides of the bowl. Then add the egg, vanilla and almond extract and mix until fully incorporated.
Step 3: In a separate bowl, mix the flour, baking powder and salt together. Then, add it to the bowl of the stand mixer and mix until it forms a loose dough.
Step 4: Place the dough onto a clean surface and knead it until it forms a ball. If the dough is sticky, you can lightly flour the surface and your hands (I didn’t use any flour). Then, cut the dough into two even sections. Add blue food coloring to one half of the dough and green to the other. Knead the dough until the color is fully incorporated.
Step 5: Take a piece of blue dough and a piece of green dough, and squeeze it together a few times until the colors are slightly marbled. Roll the dough into a ball, then flatten it to 1/4″ thick. Place it onto a cookie sheet lined with parchment paper or silpat, and repeat until all the dough is used up. Make sure to place the cookies at least an inch apart.
Step 6: Bake for 6-8 minutes. Let them sit on the cookie sheet for a few minutes, until they are firm enough to move to a cooling rack. Once they are fully cooled, store them in an airtight container. Enjoy!
Note: This sugar cookie recipe is from In Katrina’s Kitchen and it is the BEST sugar cookie recipe I’ve ever made.
You can also form heart shapes if you want! After flattening the cookie, use your fingers to form it.
If you want to save time, use your favorite store-bought cookie dough instead. Divide the dough in half, mix in the food coloring, and follow step 5. Then, follow the baking instructions on the store-bought dough.
