I don’t know anyone who doesn’t like Rice Krispies treats, do you? What’s not to like? They’re sweet, crunchy, and full of marshmallow goodness.

No, marshmallows are not vegetarian because they are made with gelatin.

If you’re vegetarian, you can still make these s’more pops! Trader Joe’s sells excellent vegan marshmallows. If you don’t live near a Trader Joe’s you can purchase vegan marshmallows here.

What’s the best way to melt white chocolate?

This recipe uses melted white chocolate to bind the Rice Krispies treats as well as for decorating.

White chocolate needs to be melted slowly, over low heat. If it gets too hot too quickly, it will “seize up” and become very grainy.

The best way to heat it is in a double boiler, where the bowl does not touch the water.

How do you make these Rice Krispies pops?

Step 1: Pour the Rice Krispies cereal into a large bowl. Set it aside.

Step 2: Add the marshmallows and butter to a pot. Heat it over medium-low heat and stir continuously, until the marshmallows are melted. Then, add a few drops of red food coloring and mix it in. Repeat until you reach your desired color.

Step 3: Pour the marshmallow mix over the cereal, and mix until everything is evenly coated.

Step 4: Lightly grease your mold with cooking spray. If you spray too much, wipe some of it up with a paper towel (excess spray will discolor your treats). Then, using a piece of parchment or wax paper, press the Rice Krispies mixture into each heart. Pop the treats out of the mold and repeat until you have used up all of the mixture.

Step 5: Next, fill a pot with water (a little less than half full) and place it over medium heat. Once it begins to simmer, turn the heat down to low. Place a heat proof bowl on top of the pot (the bowl should be just big enough to sit on top of the pot, and should not touch the water). Add the white chocolate chips and coconut oil to the bowl and stir continuously until the white chocolate melts and turns silky. Remove the bowl from the pot as soon as everything is completely melted, as you don’t want it to overheat. Overheating the white chocolate will cause it to seize up and turn grainy.

If you don’t have the right set-up to create a double boiler as explained above, you can melt the white chocolate in the microwave. Place the white chocolate chips and coconut oil in a microwave-safe bowl. Change the heat setting on your microwave to 50%. Then, place the bowl in the microwave and heat in 30-second intervals, stirring between each interval. Continue this process until the chocolate is melted. Be careful not to overheat it.

Step 6: Turn the Rice Krispies hearts over so the flat side is facing up. Then, spread some white chocolate on two hearts. Place the tip of a straw on one of the hearts, then place second heart over it (white chocolate side down) to create a “sandwich”. Then, gently squeeze the Rice Krispies to mold it around the straw. Place it on a sheet pan or a plate to let it set. Repeat this process with the rest of the hearts.

Step 7: Now it’s time to decorate! Add the remaining white chocolate to a zip lock bag and squeeze it down to one corner. Then, cut off the tip of the bag (just a tiny piece) and squeeze the white chocolate out onto the hearts as pictured below. (If you need more white chocolate to decorate, repeat step 5 to melt more.) Then, add sprinkles to the hearts and let them dry. Enjoy!
