No-Mess Vegan French Toast Sticks

Ingredients

  • 6 slices Texas Toast or other thick sliced bread
  • 1 banana
  • 1 teaspoon cinnamon
  • 1/2 cup non-dairy milk
  • 1/4 cup maple syrup
  • coconut oil or vegan butter for cooking

Instructions

  • Add the banana, cinnamon, non-dairy milk and maple syrup to a food processor or blender and blend until smooth. Pour the mixture into a bowl and set aside.
  • Cut the bread into “sticks.” I usually cut the crust off, but this is not necessary.
  • Heat oil or vegan butter in a skillet over medium-low heat. Quickly dip a bread stick into the batter and shake off the excess. Then, place it in the skillet and repeat. Cook the French toast sticks on all sides until they are golden brown. Serve immediately. Enjoy!

Notes

 
  • Stale bread is the best option for making French toast, because it prevents the inside of the bread from being soggy. If you don’t have stale bread, simply cook the French toast a little longer to “dry it out.”
 
  • I usually cut the bread into “sticks” before cooking because I like to get all of the sides toasted and caramelized. If you want to save time and effort, you can cook the slices of bread whole, then cut them into “sticks” after.
