Add the banana, cinnamon, non-dairy milk and maple syrup to a food processor or blender and blend until smooth. Pour the mixture into a bowl and set aside.
Cut the bread into “sticks.” I usually cut the crust off, but this is not necessary.
Heat oil or vegan butter in a skillet over medium-low heat. Quickly dip a bread stick into the batter and shake off the excess. Then, place it in the skillet and repeat. Cook the French toast sticks on all sides until they are golden brown. Serve immediately. Enjoy!
