Mango + Coconut Rice Baby Cereal

5 from 1 vote
Inspired by Thai mango sticky rice, this creamy homemade baby cereal combines cooked rice cereal, sweet mango, coconut milk, and a hint of ginger.
Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1/2 cup rice baby cereal Freshly prepared or safely thawed
  • 1/4 cup mango Fresh or thawed frozen
  • 1/8 teaspoon fresh grated ginger Optional
  • 1/8 cup coconut milk Plain, unsweetened

Method

  1. Make sure your rice baby cereal is fully cooked. Cut the ripe mango into small pieces, or thaw frozen mango safely in the refrigerator.
  2. Add 1/2 cup cooked rice baby cereal, 1/4 cup mango, 1/8 cup unsweetened canned coconut milk, and the optional 1/8 teaspoon grated ginger to a blender or food processor.
  3. Blend until the cereal reaches your desired consistency. Add a little water if needed. You can also use prepared infant formula or breast milk once the ingredients have cooled.
For babies ready for thicker textures, blend less thoroughly, making sure the mixture remains soft and age-appropriate.
  4. Check the temperature and texture before serving. Serve immediately or refrigerate promptly for later.

Notes

  • Recipe Tips:
    • Use ripe, sweet mango for the best flavor. Thawed frozen mango works well, too.
    • Choose plain, unsweetened canned coconut milk for a creamy consistency.
    • The ginger is optional. Start with a small amount when introducing new flavors.
    • Add liquid gradually to reach your baby's preferred consistency.
    • Offer rice cereal as part of a varied diet that includes other grains and iron-rich foods.
    • Refrigerate promptly in an airtight container for 1–2 days or freeze individual portions for 1–2 months for best quality.
    • Discard any leftovers from your baby's serving bowl.
Feeding Note: This recipe is intended for babies who are developmentally ready for solid foods, typically around 6 months old. Serve in an age-appropriate texture and consult your pediatrician about feeding or allergy concerns.
