Mango Rice Baby Cereal

Mango sticky rice is one of my favorite things to order at a Thai Restaurant. It’s a simple, yet delicious dessert and it’s what inspired this Mango + Coconut Rice Baby Cereal.

What health benefits does Mango + Coconut Rice Baby Cereal provide for my baby?

Rice is an excellent source of energy.

Mango is high in fiber which will help to prevent constipation, and is also high in vitamin C, which will boost immunity and help to ward off the common cold and flu.

Ginger is good for upset tummies, as it can reduce nausea and indigestion.

Coconut milk contains antibacterial, antifungal and antiviral properties and although it is high in fat, it is known to help with heart health.

How long will homemade baby food last?

Fresh, homemade baby food will last in the refrigerator for 3 days. Once the 3 days have passed, the remaining food should be disposed of for safety reasons.

How do you cut mango quickly?

While you can use fresh or frozen mango for this recipe, fresh always tastes best!

A mango can be tricky to cut if you don’t know how. Here’s the quickest, easiest way to cut a mango:

Step 1: A mango’s seed is large, flat and oval. Cut the flesh off on both sides of the seed. Then, cut the flesh off from around the seed.

Step 2: Score the large pieces of mango, but be careful not to cut through its skin.

Step 3: Invert the mango so the scored pieces pop out. Then, take a knife and slice off the pieces.

Are all coconut milks the same?

No, not all coconut milk is created equal! Depending on the brand, the ratio of coconut milk to water will vary, which affects the flavor, consistency and nutritional value. Some brands only contain coconut milk and water, while others have sweeteners and preservatives added. It is really disappointing to open a can (or carton) of coconut milk and have it taste watery and artificial. It can completely ruin the flavor of your dish.

I recommend using Aroy-D brand (from Thailand), which can be found at any Asian store. You can also buy it online here. It is contains 60% coconut milk and water, and that’s it. It is delicious and creamy, and tastes very natural.

How do you make Mango + Coconut Rice Baby Cereal?

Mango Rice Baby Cereal

You will need:

  • 1/2 cup of rice baby cereal, either freshly made or defrosted from your stash in the freezer
  • 1/4 cup mango, either fresh or frozen (thawed)
  • 1/8 cup canned coconut milk
  • 1/8 teaspoon of fresh grated ginger (optional)

Place all of the ingredients in a food processor and pulse until everything is combined. You can leave some pieces of mango if your baby is ready for it. Otherwise, puree it until it’s smooth. It can be thinned out with water, baby formula or breast milk if needed.

If you prefer, you can also mash the ingredients together in a bowl with a fork.
