Pizza Quesadillas

These pizza quesadillas are cheesy, crispy and ready in about 5 minutes. Customize them with your favorite pizza toppings for an easy lunch or dinner.

  • Heat a small amount of olive oil in a skillet over medium heat, using just enough to lightly coat the bottom.
  • Place a tortilla in the skillet and sprinkle shredded mozzarella evenly over the entire surface.
  • Spread a small amount of pizza sauce over one half of the tortilla. Add fresh basil and any other desired toppings to the same side.
  • Once the cheese has melted, fold the tortilla in half.
  • Cook for another 1–2 minutes per side, or until golden brown and crisp.
  • Remove from the pan, cut into 3–4 pieces and serve with extra pizza sauce for dipping.

Notes

Add any of your favorite pizza toppings, such as olives, mushrooms or peppers.
To bake the quesadillas for a larger group, preheat the oven to 425°F. Assemble the quesadillas with the sauce toward the center and surrounded by cheese. Place them on a baking sheet brushed with olive oil and brush the tops lightly with additional olive oil. Bake for 10–15 minutes, flipping halfway through, until golden brown.
