Servings: 1 cup

Ingredients

  • 4 large carrots
  • 2 teaspoons extra-virgin olive oil
  • 2 tablespoons coconut milk
  • 4 teaspoons fresh dill
  • 1/4 cup water, breast milk or baby formula

Method

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and peel the carrots, then cut them into approximately 1-inch by 1/2-inch pieces.
  3. Toss the carrots with the olive oil until evenly coated. Spread them in a single layer on the prepared baking sheet. Roast for 15 minutes.
  4. Remove the baking sheet from the oven and sprinkle 2 teaspoons of fresh dill over the carrots. Return to the oven and roast for another 15 minutes, or until the carrots are very soft and easily mashed with a fork.
  5. Allow the carrots to cool slightly. Transfer them to a blender or food processor with the remaining 2 teaspoons of dill, coconut milk, and water. Blend until smooth, adding a little more liquid as needed to reach your desired consistency.
  6. Allow the puree to cool to a safe serving temperature. Check the texture before serving to ensure it is appropriate for your baby's developmental stage.

Notes

  • Recipe Tips:
    • Roasting brings out the carrots' natural sweetness and gives this puree a richer flavor.
    • Use plain, unsweetened canned coconut milk without added sugar.
    • For a smoother puree, use a high-powered blender and add small amounts of liquid as needed.
    • Substitute fresh parsley for the dill to try a different flavor.
    • For babies ready for thicker textures, mix in a little well-cooked quinoa.
    • Refrigerate promptly in an airtight container for 1–2 days or freeze in individual portions for 1–2 months.
    • Discard any leftovers from your baby's serving bowl.
Feeding Note: This recipe is intended for babies who are developmentally ready for solid foods, typically around 6 months old. Introduce new ingredients individually when appropriate, serve at a safe temperature, and adjust the texture to your baby's needs. Consult your pediatrician if you have feeding or allergy concerns.
