If a piña colada and a strawberry daiquiri had a baby, it would be a lava flow! It’s a delicious drink sipped on by tourists along Hawaii’s beaches.
These non-alcoholic Lava Flow Popsicles are a fun summer treat for the whole family. They’re slightly tart, creamy, so yummy!
How do you make Lava Flow Popsicles?
You will need:
- 3/4 cup of canned coconut milk
- 3/4 cup of whole milk
- 5 teaspoons + 1 teaspoon sugar, separated
- 1/2 cup of pineapple juice concentrate
- 1 cup strawberries, fresh or frozen (thawed)
- 1/4 cup water
- popsicle mold
- popsicle sticks
- food processor or blender
This recipe makes about 12 2-ounce popsicles. The recipe amounts may have to be adjusted to fill different sized popsicle molds.
By the way, if you don’t have any popsicle molds on hand, it’s not a big deal! Here are some creative homemade molds you can try.
Method:
- In a food processor or blender, add strawberries, water and 1 teaspoon of sugar. Puree until smooth. Make sure to taste the mixture and adjust sugar if needed (it may need a little more depending on the sweetness of the strawberries).
- Add the remaining ingredients to a bowl and gently mix until the sugar is dissolved. Avoid creating air bubbles, as it will create small air pockets in your final product. (It’s not a big deal if it happens…it will still taste great! It’s more about the presentation.)
- Evenly spoon the strawberry mixture into the popsicle molds.
- Pour the milk mixture over the strawberry mixture and fill to the top of your popsicle molds. If your mold has a place to insert popsicle sticks, do so now.
- Freeze for 6 hours or overnight.**If your popsicle mold does not have a place for popsicle sticks, remove the mold from the freezer after about 2 hours. Place the popsicle sticks in, and return to the freezer for at least another 4 hours.**
- When you are ready to eat them, run the popsicle mold under warm water, then gently pull on the popsicle sticks to release them from the mold. Enjoy!

Are all coconut milks the same?
No, not all coconut milk is created equal! Depending on the brand, the ratio of coconut milk to water will vary, which affects the flavor, consistency and nutritional value. Some brands only contain coconut milk and water, while others have sweeteners and preservatives added. It is really disappointing to open a can (or carton) of coconut milk and have it taste watery and artificial. It can completely ruin the flavor of your dish.
I recommend using Aroy-D brand (from Thailand), which can be found at any Asian store. You can also buy it online here. It is contains 60% coconut milk and water, and that’s it. It is delicious and creamy, and tastes very natural.
Substitutions
Pineapple Concentrate:
You can substitute fresh pineapple juice or canned pineapple juice for the (frozen) concentrate if you prefer, but the pineapple flavor won’t be as strong. Keep in mind, if you use a larger ratio of fresh (or regular) juice to milk, you will get a stronger pineapple flavor, but the consistency will be more icy instead of creamy.
Milk:
I use a combination of coconut milk and regular milk because I like the flavor and consistency it creates. If you want to make a vegan version of the Piña Colada Popsicles, simply replace the regular milk with more coconut milk.
How do I store the lava flow popsicles?
You can store the popsicles in an airtight container or freezer bag with parchment paper between any layers you may have.
