Pizza quesadillas combine my two favorite foods into one delicious meal! They’re quick and easy to serve up for a last-minute meal.
As a busy mom, I’m always looking for quick and easy food ideas that will satisfy everyone in the family. We have a vegetarian (me), two sometimes picky kids, and a meat lover (dad) in our household, so when I find something that everyone loves, it’s a big win!
Everyone in this family loves pizza and quesadillas, so the other night, I decided to combine the two and see what happens. It was a hit! My kids even asked for seconds and thirds! It has all the feels of a pizza, but is made in about 5 minutes with minimal effort. This is definitely making it to our dinner rotation.
Great for toddlers!
If you’re looking for easy toddler food ideas, this is for you. My two-year-old absolutely loved it! I simply cut it the quesadillas into small triangles and served it with some fruit and veggies. She especially enjoyed dipping the quesadillas in pizza sauce!
Easy to Customize
These pizza quesadillas are so easy to customize, just add your favorite pizza toppings. Some suggestions are:
- olives
- mushrooms
- bell peppers
- onions
- pesto
- bbq sauce
How do you make pizza quesadillas?
Ingredients:
- flour tortillas
- pizza sauce
- shredded mozzarella
- extra-virgin olive oil
- fresh basil (optional)
Step 1: Heat a little olive oil (just enough for a thin coat) in a pan over medium heat. Then place a tortilla in the pan and add a layer of cheese to the entire tortilla.
Step 2: Add the pizza sauce to half of the tortilla. (A little sauce goes a long way…too much sauce will cause it to ooze out when cutting, and will make the quesadillas soggy). Then, add the fresh basil and any other toppings you’d like to the same half of the tortilla.
Step 3: Once the cheese has melted, fold the tortilla in half. Then, continue to cook on each side until it is golden brown (1-2 minutes).
Step 4: Cut the quesadilla into 3-4 pieces and serve with extra pizza sauce for dipping. Enjoy!
How to bake pizza quesadillas instead:
If you are feeding a lot of people, baking the quesadillas will save you a lot of time!
Preheat the oven to 425ºF. Then, assemble the quesadillas. Make sure the sauce is in the middle (surrounded by cheese) so it doesn’t make the tortilla soggy. Place the quesadillas on a baking sheet brushed with olive oil. Then, brush the tops of the quesadillas with olive oil. Bake for 10-15 minutes, or until golden brown. Make sure to flip the quesadillas half way through.
