This recipe is for Vegan Sweet Corn Fritters. They are slightly sweet, crispy on the outside, and soft on the inside. Serve them as an appetizer or side dish.
I never had corn fritters until I moved to New Zealand. And let me tell you, it was love at first bite!
They are slightly sweet, savory, and oh-so-delicious. Top them off with your favorite garnishes (mine happen to be avocado, salsa, and sour cream) and your taste buds are in for a real treat!

Yes, you can freeze them. Place them in an airtight container and use parchment paper between the layers to prevent them from freezing together.
When you’re ready to eat the corn fritters, defrost them in the microwave. Then, put them in a dry pan over medium-high heat (1-2 minutes per side) to crisp them up.
How do you make Vegan Sweet Corn Fritters?
Ingredients:
- 1- 14.75 oz can of cream style corn
- 3/4 cup of all purpose flour
- 1/2 cup of corn meal
- 1/2 teaspoon of salt
- 1 teaspoon of baking powder
- a handful of fresh herbs (cilantro, parsley, chives, or green onions)
- oil for frying (avocado oil, grapeseed oil or vegetable oil)
Step 1: Add all of the dry ingredients to a large bowl and mix.
Step 2: Add the corn and herbs and mix until just combined. Don’t over-mix.
Step 3: Heat the oil in a frying pan over medium heat. Be liberal with the oil, because this is what gives the fritters their crispy exterior. I like to use a non-stick pan because I feel like I don’t need quite as much oil.
Step 4: Pour the batter into the pan, using 1/4 cup per fritter. Fry them for 3-4 minutes on each side, until they are golden brown.
Step 5: Remove the fritters from the pan and place them on a plate lined with paper towel. When you’re ready to serve them, transfer them to another plate and serve with your favorite sauce or topping. Enjoy!
