This healthy mac and cheese is perfect for even the pickiest toddlers! Complete with a hidden veggie, this recipe is a winner!
What kid doesn’t like mac and cheese? I’m always trying to find a healthier version that my kids will approve of, and I finally found it!
This mac and cheese has a good amount of cauliflower in it, which helps to give it a thick, creamy texture. A hidden veggie and less cheese? Yes, please! This is definitely a mom win for me.
Meal Prep
The best thing about this mac and cheese is that it’s great for meal prep. I portion it out in silicone cupcake liners and freeze them. That way, I can pop them into the microwave and serve them at any time.
The best way to freeze them is line them on a sheet pan and place them in the freezer until frozen solid. Then, place them in a freezer bag and store them in the freezer for up to 3 months.

How do you make healthy mac and cheese cups?
Ingredients:
- 1 1/2 cups uncooked macaroni
- 2 cups cauliflower
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 tablespoon of butter
- salt to taste
Supplies:
Step 1: Cook the macaroni according to the directions on the package and drain well.
Step 2: Meanwhile, cut the cauliflower into small pieces, then steam for about 10 minutes, or until soft.
Step 3: Add the cauliflower to a blender, along with the milk, cheese, butter and salt. Blend until smooth.
Step 4: Pour the sauce over the macaroni while it’s still hot, and stir until evenly coated.
Step 5: Serve immediately. Or, if you’re meal prepping for your toddler, add the mac and cheese to silicone cupcake liners. Store in the refrigerator for up to 5 days. Or, to freeze, line them on a sheet pan and place them in the freezer until frozen solid. Then, place them in a freezer bag and store them in the freezer for up to 3 months.
Change it up!
My kids don’t like baked mac and cheese. But if yours do, divide the mac and cheese into the silicone cups, then sprinkle cheese or breadcrumbs over the top and bake them for a few minutes.
You can also spice it up with a dash of garlic powder and/or paprika!
