This recipe is for a refreshing watermelon cucumber smoothie. It’s vegan, so easy to make, and only uses 4 ingredients!

Watermelons are one of my favorite summer fruits. They are sweet, juicy and refreshing…what’s not to love?!

Some of the watermelons that we get are so big, though, that we find ourselves not being able to finish it all before it goes bad.

My solution to this? Watermelon smoothies!

Here is my recipe for a refreshing watermelon cucumber smoothie that my whole family (including my 3-year-old and 1-year-old) absolutely love!

It’s such a great treat to have on a hot summer day. And if it gets my kids to drink some veggies…I feel like that’s a big win for mom!

What are the health benefits of watermelon cucumber smoothies?

Watermelon is very hydrating, as it is 90% water and contains electrolytes. It also provides a good amount of vitamin C, which is essential for your body to produce collagen and to keep your eyesight sharp.

Cucumbers are very hydrating and contain electrolytes as well. They also contain vitamin K, which helps to keep your bones healthy, and vitamin A, which helps with your immune system and vision.

Limes are full of antioxidants and are also a good source of vitamin C. Limes are also good for heart health and digestive health.

How do you make a thick watermelon cucumber smoothie?

This watermelon cucumber smoothie melts fast, so it’s important to make it as thick as possible. The three “must haves” to making this smoothie thick are:

  • A powerful blender
  • Using frozen watermelon
  • Using the least amount of liquid possible

How do you freeze watermelon?

Freezing watermelon is simple! Cut the watermelon into small cubes, and place them in a single layer on a baking sheet lined with parchment paper.

If you are freezing a lot of watermelon, you can stack layers on top of each other. Just make sure to use parchment paper between each layer.

Place the baking sheet in the freezer for at least 3 hours, or until the watermelon is frozen solid.

Then, transfer them to an airtight container, or freezer bag.

How do you make a watermelon cucumber smoothie?

Ingredients:

  • 2 cups frozen water melon
  • 1/2 cup cucumber, peeled and deseeded
  • 2 teaspoons lime juice
  • 2 teaspoons agave (or other flavorless sweetener of choice such as sugar, stevia, etc. I wouldn’t recommend honey or maple syrup.)

Equipment:

Blender (preferably high-powered)

Step 1: Place all of the ingredients in a blender, and blend on high until smooth. Stop the blender and stir as needed. If extra liquid is needed for blending, pour water in a little at a time. For a thick smoothie, add as little liquid as possible.

Step 2: Pour into your favorite glass and serve it ASAP (it melts quickly). ENJOY!

Can you omit the lime from this recipe?

Technically, you can make this smoothie without the lime, but I would not recommend it.

The lime brightens the flavors of the watermelon and cucumber. Without it, the smoothie will taste very flat and the cucumber taste will be too strong.

Notes

Thick smoothies are the best!  A good, powerful blender plays a big role in this.
