Lets be honest…I’ve packed on a few pounds during the last year. The Covid-19 pandemic, isolation, and added stress of raising kids during uncertain times has not been kind on my body. I’ve been trying to shed the extra weight for some time now.

Enter this healthy chocolate peanut butter smoothie. It’s thick, creamy and so satisfying! It’s packed with spinach, protein and just a splash of sweetener. I drink this for a “dessert” breakfast, a mid-day pick me up, or for dessert at the end of the day. It definitely satisfies my chocolate cravings. Best of all? My kids absolutely love it!

Have leftover smoothie?

If you can’t finish your smoothie, don’t waste it! Simply pour it into a popsicle mold and pop it in the freezer. It makes a great frozen treat for later.

Whether or not your kids have trouble eating their veggies, adding spinach to smoothies is a great way to sneak more of it into their diet! The chocolate and peanut butter completely masks the spinach’s tastes and color, so its definitely a mom win!

One thing to keep in mind, though, cocoa powder does contain a small amount of caffeine.

What are overripe bananas?

The key to this smoothie is using frozen “overripe” bananas. These bananas are naturally really sweet (which means you’ll have to add little to no extra sweetner).

An overripe banana has lots of dark brown spots on it, and is a little softer in texture. The picture below shows the banana at the perfect stage.

The starch in an overripe banana has mostly converted to sugar, so it is a lot sweeter and easier to digest. It also has a higher level of antioxidants than a less ripe banana.

How do you make this healthy chocolate peanut butter smoothie?

Ingredients:

  • 2 cups frozen, overripe banana
  • 3 tablespoons of peanut butter
  • 2 tablespoons of cocoa powder
  • 2 big handfuls of fresh spinach
  • 1 cup dairy free milk of your choice (I use organic soy milk)
  • maple syrup or honey to taste

Method: Place all of the ingredients in a blender and blend until smooth. Enjoy!
