Red Lentil + Carrot Baby Food

Dhal, a general term for Indian lentil stew, is one of my favorite Indian dishes because it’s healthy, hearty and delicious.  That’s where I got my inspiration for this Red Lentil + Carrot Baby Food Mash. 

What health benefits does Red Lentil + Carrot Baby Food Mash provide for my baby?

Red lentils are high in protein and fiber, which are both important parts of your baby’s diet.

Carrots are a good source of vitamins A and C, which maintain eye health and boost immunity to help ward off the common cold or flu.

Coriander helps to lower blood sugar and helps with digestion.

Turmeric is known for its powerful antioxidants and has anti-inflammatory properties.

Cilantro is high in vitamin K, which promotes healthy bones.

Coconut milk contains antibacterial, antifungal and antiviral properties and although it is high in fat, it is known to help with heart health.

Are all coconut milks the same?

No, not all coconut milk is created equal! Depending on the brand, the ratio of coconut milk to water will vary, which affects the flavor, consistency and nutritional value. Some brands only contain coconut milk and water, while others have sweeteners and preservatives added. It is really disappointing to open a can (or carton) of coconut milk and have it taste watery and artificial. It can completely ruin the flavor of your dish.

I recommend using Aroy-D brand (from Thailand), which can be found at any Asian store. You can also buy it online here. It is contains 60% coconut milk and water, and that’s it. It is delicious and creamy, and tastes very natural.

How long will homemade baby food last?

Fresh, homemade baby food will last in the refrigerator for 3 days. Once the 3 days have passed, the remaining food should be disposed of for safety reasons.

How do you make Red Lentil + Carrot Baby Food Mash?

Ingredients:

Step 1: Place all of the ingredients, except the cilantro, in small pot and bring to a boil.

Step 2: Cook over medium heat for 12 minutes, stirring occasionally so it doesn’t stick to the bottom of the pot. Then, add the cilantro and cook for another 3 minutes. The carrots should be very soft and the lentils should be broken down.

Step 3: Take the pot off the heat and let it cool for a few minutes. If this mixture is too thick, it can be thinned out with breast milk, baby formula, or water as needed.

Note: Everything in this baby food is very soft, so it can be given to your baby as is.  However, if your baby is not ready for the chunky consistency, it can be mashed with a fork or pureed.

Notes

  • This baby food can be served as is because everything is very soft. However, if your baby is not ready for the chunky texture, you can either mash it with a fork or puree it in a food processor or blender.
  • Not all coconut milks are the same (they vary in taste and ingredients).  I highly recommend using Arroy-D coconut milk.
